Neighbor Inspired Recipe: Strawberry Mint Salad

Despite the fact that we live in a neighborhood formerly known as “Poverty Gulch,” we are rich in wonderful neighbors.  It’s took us about 2 years to really get out of our apartment living mentality of just waving and saying hello. We live in a Townhouse on a main street that doesn’t allow us to be in our yards weeding and talking to neighbors as they are walking by. But, over the past 5 years, we’ve discovered just how cool our neighbors are. And, I’m not just talking next door neighbors.

Volunteering in our local neighborhood council and having a boy in school has helped us engage in our community. As a bonus, we’ve gotten to know some amazing people within a 1-block radius of where we live. Sunday was a fun example of how cool this is. We got invited that morning to a BBQ dinner!   We enjoyed a feast of grilled Salmon, Tuna, Veggies (Potatoes, Zucchini, Red Peppers, Asparagus), and a Salad picked fresh from the garden. Our neighbor opened a whole new world for me and my salad tastes: Mint! It was a simple salad with fresh Lettuces, Orange Mint and a dressing she whipped up with Yogurt, Mustard, Maple Syrup and Olive Oil, but it was a taste sensation.

I was so inspired, that I couldn’t wait to make us a salad with our over abundant Lemon Balm Mint today. Our Strawberries are ripe, so I added those too. Digging in the refrigerator added the rest of the inspiration, and that’s how this recipe was created. As you can see, my daughter helped make this – she ripped up the Mint and Lettuce leaves, and I cut the Cucumber and strawberries. I would probably take a total of 5 minutes to prepare this if you didn’t have a little assistant helping you.

A whole Romaine lettuce head or about 8 leaves of lettuce…


Cucumber adds a touch of crunch and hearty texture…


Toss it to mix and drizzle with dressing!

Recipe: Strawberry Mint Salad


– 1 Romaine Lettuce Head (or about 10 leaves)

– Half a Cucumber (about 1/2 Cup)

– 4 to 6 Ripe Strawberries

– 4-6 Mint Leaves (we used Lemon Balm Mint, any type will do)

Chop the Lettuce, slice the Strawberries and Cucumbers to desired thickness, dice or tear up the mint leaves and toss together. For dressing, we used a drizzle of Olive Oil and squeezed half a Lemon, adding a little salt.  You could use a Vinaigrette dressing or just a squeeze of lemon.
